Protein Pancakes

Ingredients list

▫  3 cups of Krusteaz Protein Pancake Mix (*can use Kodiak brand or regular pancake mix as well)

  • ▫  2 cups of water ▫ 3eggs

    * Optional Add-ins/toppings

    - Blueberries, sliced strawberries, sliced bananas, Cinnamon, nuts, coconut flakes, Peanut Butter, honey, agave syrup, jam or fruit spread, apple sauce, maple syrup, greek yogurt etc.

    *Suggested Sides:

▫ 1 Orange - (2-5/8 inch diameter) *Optional, can substitute a different fruit based on preference

Directions

Preheat oven to 425 degrees Fahrenheit and coat an 18x13 inch rimmed baking sheet with cooking spray.

  1. Prepare the pancake batter by combining protein powder, water and eggs. Mix until just combined (don’t overmix otherwise the pancakes won’t rise as well).

  2. Pour the batter onto the cooking sheet. Section out parts of the batter and add any desired mix-ins.

  3. Bake until golden and a tooth-pick comes out clean, about 12-15 minutes.

5. Enjoy with a piece of fruit and topping of choice (nutrition facts estimated using 1 orange and 1⁄4 cup of maple syrup).
