Tuna Melts

Ingredients List

▫ 6 Slices of 100% Whole Wheat Bread (Orowheat bread used for Nutrition facts)

▫ 1Avocado,mashed

▫ 4 – 5 oz. Cans of White Tuna (Water Packed)

▫ 12 Slices of Reduced Sodium Dill Pickle Sandwich Slices

▫ 1⁄4 cup + 1 tbsp of Light Mayonnaise (Roundy’s or other brand)

▫ 1 tsp of ground Black Pepper

▫ 1⁄2tspofTableSalt

▫ 2 tsp of Dijon Mustard

▫ 1-2 large Tomatoes (Sliced into 6 slices)

▫ 2 cups of baby spinach

▫ 1./2 cup of Shredded Sharp Cheddar Cheese or Jalapeno cheddar cheese

Directions

1. Preheat oven to 375°F. Toast 6 slices of 100% whole wheat bread. While the bread is being toasted, peel and mash the avocado. Spread evenly on each slice of bread (1-1.5 tbsp per slice). Place slices of bread on a baking sheet, evenly spacing them apart.

2. Open and drain each can of tuna, set aside. In a medium sized bowl, add tuna, mayo, pepper, salt, dijon mustard. Mix well. Divide the tuna mixture evenly between each slice of bread.

3. Top the tuna mixture with 1/3 cup of fresh baby spinach, 2 slices of Dill pickle, 1 thick slice of tomato. Sprinkle each tuna melt with the shredded cheese, dividing evenly.

4. Bake the tuna melts until warm and cheese is bubbling (~5 or 6 minutes).

*Side Suggestion (included in nutrition facts): Enjoy with a medium sized apple and 1 serving of “Popcorners Whole grain chips” (flavor of choice)
